Jamie doesn’t like to serve a guest at our bed and breakfast the same breakfast twice, at least until they’ve stayed with us several times. This slightly spicy creation is included in a non-egg breakfast and is one of the recipes our guests ask us to repeat!
MEATY MORNING MUFFINS
1 lb. Bulk Sausage (we use regular, but Sage also works well)
2-4 ozs. Sun Dried Tomatoes
6 ozs. Velveeta – Cubed
6 English Muffins – Split
Brown sausage. While sausage is browning, soak sun dried tomatoes in boiling water until soft.
Dice dried, softened tomatoes and add to the sausage along with the Velveeta. Heat mixture until cheese is melted.
Lightly toast English Muffins. Generously spread meat mixture on English Muffin halves. Bake at 350 degrees for 10 minutes.
Yields: 12 Halves/24 Quarters
